Tomato Dill Penne

INGREDIENTS

6 tomatoes, chopped
About 8 cups of cooked penne (or brown rice penne)
2 Tbsp chopped fresh dill
1 Tbsp grated lemon rind
1/2 tsp sea salt
1/2 tsp freshly ground pepper

DIRECTIONS

Cook tomatoes in a large skillet over medium heat, stirring gently, for about 2 minutes. Add pasta, dill, and remaining ingredients. Cook, stirring often, just until thoroughly heated.

Serve immediately.
