Simple Coleslaw

INGREDIENTS

1/2 cup white wine vinegar
6 Tbsp extra virgin olive oil
1 tsp sea salt
Freshly ground pepper, to taste
1 head green cabbage, grated
2 or 3 carrots, grated

DIRECTIONS

Combine vinegar, oil, salt, and pepper in a large bowl. Add cabbage and carrots, and toss. Cover and refrigerate for at least 5 hours (or overnight) to allow the flavours to meld.
