Cucumber and Mint Salad

INGREDIENTS

1 field cucumber, peeled and sliced
1 cup sliced celery
1 can chickpeas, drained and rinsed
3 carrots, peeled and shredded
1/4 cup raisins
1 cup chopped fresh mint
2 Tbsp extra virgin olive oil
3 Tbsp white wine vinegar

DIRECTIONS

Place the cucumber, celery, chickpeas, carrots, raisins, and mint in a large bowl, and toss with the olive oil and white wine vinegar to coat. Serve immediately
