Tropical Mint Salad

INGREDIENTS

2 cups fresh pineapple, cubed
1 carrot, peeled and chopped
1 cucumber, peeled and chopped
1 mango, peeled and cubed
1 tsp lemon juice
1/4 Tbsp extra virgin olive oil
1 Tbsp honey
A few chopped fresh mint leaves
Sea salt and crushed pepper to taste

DIRECTIONS

Combine pineapple, carrot, cucumber, and mango in a large bowl.

In a separate bowl, whisk remaining ingredients. Add to salad and toss well to coat. Serve chilled.
